Red Rooster Espresso is Ithaca Coffee Company's signature organic espresso: luscious and rich, chocolatey and malty-sweet, with aromas and flavors of cherries, vanilla and caramel. Sold in 2 lb and 5 lb bags.
Ithaca Coffee Company serves Red Rooster at its own espresso bars. It blends coffees from Colombia, Sumatra, Ethiopia and Bali, and Ithaca says it makes espresso drinks amazingly chocolatey and malty-sweet. As a brewed coffee it yields a complex cup with deep flavor and a sweet, spicy finish.
Ithaca's own cafe recipe: 19 to 21 grams of espresso, brewed to 33 to 35 grams of beverage, in 25 to 30 seconds.
