Coffee roast levels, explained

Light, medium, dark, and Italian: what changes in the bean, what changes in the cup, and which roast fits which method.

What roasting does

Roasting drives two families of chemistry: Maillard reactions (browning, savory and toasty aromatics) and pyrolysis (thermal decomposition of sugars and organic acids). As internal bean temperature climbs from ~150 °C to ~230 °C, acidity drops, body increases, sweetness peaks and then falls, and bitter compounds accumulate.

Two audible landmarks structure most roasts: first crack (~196 °C) marks the transition to drinkable coffee, and second crack (~224 °C) marks the entry into dark territory.

The levels

  • Light — dropped shortly after first crack. Dry surface, high acidity, origin character intact.
  • Medium — dropped between first and second crack. Balanced acidity and body, most versatile.
  • Medium-dark — into the early edge of second crack. Fuller body, muted acidity, chocolate and caramel forward.
  • Dark / Italian — well through second crack. Oily surface, low acidity, dominant roast character over origin.

Matching roast to method

  • Pour-over / filter → light to medium. Preserves acidity and clarity.
  • Espresso → medium to medium-dark for balance; darker for traditional Italian character.
  • French press / immersion → medium to medium-dark. Rewards body and sweetness.
  • Moka pot → medium-dark. Handles the harsh extraction gracefully.

Freshness and grinding

Roasted coffee peaks between roughly 5 and 21 days off-roast. Grind immediately before brewing. Store in an opaque, sealed container at room temperature — not in the freezer for daily use.
